Snow pea, capsicum and quinoa salad

The snow pea and capsicum mixture goes well with grains; try quinoa, as in the recipe, or substitute it with brown rice or cooked barley.

Ingredients

Serves 4

250g snow peas
2 cups cooked mixed rice and quinoa
2 orange capsicum, deseeded and sliced
ΒΌ cup vinaigrette

 

 

Method

Remove the tops from snow peas.
Place rice and quinoa in a bowl.
Add snow peas and capsicum.
