Rocket and broccoli pasta
Try using wonderful fresh asparagus in spring.
Ingredients
Serves 4
2 cups cooked pasta
1 Tbsp canola oil
2 cups rocket or baby spinach
4 small tomatoes, quartered
2 cups chopped broccoli, blanched
Method
Mix pasta, oil and rocket together in a bowl.
Add tomatoes and broccoli and serve. Add a little vinaigrette and sprinkle over toasted nuts (optional).
