Lettuce cups
A refreshing summer salad or light meal.
Ingredients
Serves 4
1 cup sliced lettuce
1-2 cups diced melon
2 cups cooked rice
½ cup cooked, diced chicken
pinch salt
pepper, to taste
4 iceberg lettuce cups, washed
fresh parsley sprigs, to garnish
Method
Place lettuce, melon, rice and chicken in a bowl.
Add salt and pepper and mix.
Spoon equal amounts into the lettuce cups, garnish and serve.
