Guacamole

Always popular and so easy. Add One More Veg with sliced capsicum or cauliflower florets on the side too.

Ingredients

Makes 1-2 cups

1-2 ripe avocados, peeled and mashed
1 Tbsp sweet chilli sauce
2 tomatoes, finely chopped, keep some for garnish
1-2 Tbsp lemon juice
1 small red onion, peeled and finely chopped, keep some for garnish
pinch salt
freshly ground black pepper, to taste

Method

Blend avocados, chilli sauce, tomatoes, lemon juice, onion, salt and pepper together.
Garnish with retained tomatoes and onion.
Serve with raw carrot sticks or wholemeal bread.
