Greek salad

With fresh and crisp flavours and textures

Ingredients

Serves 4

½ telegraph cucumber, diced
½ red capsicum, deseeded and diced
½ green capsicum, deseeded and diced
½ yellow capsicum, deseeded and diced
2 tomatoes, diced
1 red onion, peeled, diced
½ cup (50g) feta cheese, diced
½ cup black olives
2 Tbsp white wine vinegar
2 Tbsp olive oil
1 tsp sugar

Method

Place vegetables, feta cheese and olives into a serving dish.
Place vinegar, oil and sugar in a screw top jar and mix until sugar has dissolved.
Pour over vegetables and toss gently. Serve.
