Chargrilled Asparagus with Chilli & Lemon

Serves 4 as a side dish

2 bunches fresh asparagus
2-3 tablespoons olive oil
1 clove garlic, finely sliced
1 medium chilli, finely sliced
1 lemon, zest and juice
Sea salt and cracked pepper to taste.

METHOD
  1. Trim the asparagus spears of any hard ends then toss in the olive oil, sliced garlic and chilli.
  2. Cook the asparagus on a pre-heated grill or a grill pan for 3-4 minutes turning frequently until tender and coloured.
  3. Squeeze over the lemon juice and sprinkle with lemon zest. 4. Season with salt and pepper before serving.
