Tomato and cucumber salad
This is a subtle flavoured salad which tastes great and uses the light green leaves from the middle of the celery bunch.
Ingredients
Serves 4
6 medium tomatoes, sliced into wedges
1 telegraph cucumber, sliced in half lengthwise, then sliced in half rings
1 cup celery leaves from middle of bunch, or rocket leaves
Dressing:
1 Tbsp cider vinegar
1 Tbsp lite olive oil
2 tsp wholegrain mustard
1 tsp brown sugar
Method
Place tomatoes, cucumber and celery leaves on a serving platter.
Blend vinegar, oil, mustard and sugar together.
Drizzle the dressing over the salad and gently toss just before serving.
