Shallot vinaigrette and tomatoes

The Dijon mustard gives this delicious dressing added zing.

Ingredients

Makes approx ½ cup

2 tsp Dijon mustard
1 Tbsp red wine vinegar
pinch salt
freshly ground black pepper, to taste
3 Tbsp avocado or olive oil
4 shallots, finely chopped
1 Tbsp chopped capers
4 tomatoes, sliced into wedges

Method

Whisk together mustard, vinegar, salt, pepper and avocado oil.
Stir in shallots and capers.
Place tomatoes in a bowl and spoon over the dressing.
Serve.

Variation: Use this dressing over avocado slices.
