Roasted tomatoes on toast
Roasting tomatoes intensifies their flavour.
Ingredients
Serves 2
4 medium tomatoes, sliced in half
pinch salt
freshly ground black pepper, to taste
olive oil
4 pieces of wholegrain bread, toasted
2 sprigs parsley
Method
Preheat oven to 180°C.
Place tomatoes cut side up in a single layer in a roasting pan.
Sprinkle with salt, pepper and lightly drizzle with oil.
Bake in preheated oven for 20-30 minutes, or until tomatoes are slightly shrivelled, but still retain their shape. Remove from oven.
Serve on toast, garnished with parsley.
Variation: grill under preheated grill for 8-10 minutes, or until tomatoes are tender.
