Roasted pesto kohlrabi
Roasted kohlrabi - so delicious, especially with pesto!
Ingredients
Serves 4
2 kohlrabi, peeled and diced
2 Tbsp basil pesto
1 Tbsp sliced red capsicum, for garnish
Method
Preheat oven to 180°C.
Place kohlrabi in a baking dish, add pesto and mix to coat.
Bake in preheated oven for 20 minutes or until golden.
Place in a serving dish and sprinkle with the capsicum.
