Pickled fennel

An impressive and delicious salad with a light liquorice taste.

Ingredients

Makes 1-2 jars

2 cups cider vinegar
1 cup sugar
1 star anise
1 bulb fennel, finely sliced

 

 

 

Method

In a saucepan, bring vinegar, sugar and star anise to the boil.
Remove from the heat, add fennel and allow to cool in the liquid.
Place cooled mixture in a jar and store in the refrigerator.
Serve with cold sliced meats.
