Parsley, cucumber and red capsicum

Parsley adds colour and flavour to this colourful salad.

Ingredients

Serves 4

¼ telegraph cucumber, sliced into batons
¼ cup vinaigrette
1 cup chopped parsley
½ red capsicum, deseeded, sliced into matchsticks

 

 

 

 

Method

Place cucumber in a bowl, pour over vinaigrette and sprinkle with parsley.
Arrange capsicum on top and serve.
