Leek and swede gratin
A delicious alternative to a popular gratin.
Ingredients
Serves 4
1 swede, peeled and finely sliced
1 leek, sliced
2 potatoes, peeled and finely sliced
1 stock cube, vegetable or chicken, or 1 tsp stock powder
1 cup grated cheese
1-2 Tbsp chopped parsley
2 cups milk
2 Tbsp chopped parsley, for garnish.
Tip: try adding one grated celeriac or turnip for a different flavour.
Method
Preheat oven to 175°C.
Layer swede, leek and potatoes in a medium-sized roasting dish,.
Place stock cube, cheese, parsley and milk in a bowl and mix until well combined.
Pour evenly over vegetables in roasting dish.
Cover with aluminium foil and bake for 30 minutes.
Remove from oven and remove aluminium foil.
Return to oven and bake for a further 30 minutes, uncovered.
Remove from oven and serve, garnished with parsley.
Suggestions:
Replace swede or potatoes, with kūmara or pumpkin.
