Cucumber salad
Salads don't have to be complicated to taste and look great.
Ingredients
Serves 4
1 telegraph cucumber, with skin on
1-2 cups salad leaves
ΒΌ cup balsamic vinegar
2 Tbsp chopped coriander, Italian parsley or thyme
freshly ground black pepper, to taste
Method
Slice cucumber lengthwise with either a cheese slicer or a vegetable peeler.
Arrange lettuce on serving dish.
Place cucumber slices on top.
Drizzle with balsamic vinegar.
Sprinkle with fresh herbs and pepper. Serve.
