Cucumber, avocado and red onion salad
Dill, lemon and parsley add a different flavour to these popular salad vegetables.
Ingredients
Serves 4
½ telegraph cucumber, halved, deseeded and sliced
1 avocado, peeled and chopped
1 red onion, sliced into wedges
1 tomato, chopped
Dressing:
½ Tbsp chopped parsley
½ Tbsp chopped dill
1 lemon, zest and juice
1 red onion, finely chopped
1 Tbsp white vinegar
¼ cup olive oil
Method
Place cucumber, avocado and onion in a bowl. Pour dressing over.
Place on a serving dish and garnish with tomato. Serve.
Dressing:
Combine dressing ingredients in a screw top jar. Shake well.
