Cooking Jerusalem artichokes
Try these tasty and different vegetables.
Ingredients
Serves 6
8-12 artichokes
2 Tbsp finely chopped parsley
1-2 Tbsp olive or nut oil
Method
If necessary, scrub artichokes with a vegetable brush. The skin can also be scraped off if required.
Cooking:
Place in a pot of boiling salted water and cook for 15-20 minutes.
Alternatively place in a steamer over boiling water and steam for 20-25 minutes.
To serve:
Sprinkle with parsley and drizzle with olive or nut oil if desired.
