Caramelised onion soup
This soup is worth the wait while the onions are caramelising – it’s delicious.
Ingredients
Serves 4
1 Tbsp canola oil
4 onions, finely sliced
1 vegetable stock cube
4 cups hot water
1 Tbsp vinegar
chopped parsley for garnish
Method
Heat oil in a large saucepan.
Add onions and cook over a low heat for about an hour, or until soft and just beginning to brown.
Dissolve stock cube in hot water, then add to onions with the vinegar.
Bring to the boil, reduce heat and simmer for a further 30 minutes.
Remove from heat and serve garnished with parsley and with crusty bread rolls.
