Quick Cook Asparagus with Seasonal Dips

Serves 4

2 bunches fresh asparagus
2 slices lemon
Pinch of sea salt
Hummus, feta dip, pesto – store bought, whatever you’re into!

METHOD
  1. Trim the asparagus spears of any hard ends then cut in half to make dipping spears.
  2. Place in a shallow dish in a single layer with the lemon slices and sprinkle of salt.
  3. Pour over enough boiling water to cover and allow to sit for 2 minutes.
  4. Drain and refresh under cold water.
  5. Drain thoroughly and arrange on a platter with your favourite dip.
