Asparagus & Cheddar Toasted Scrolls

Serves 4-6 as a snack

2 bunches fresh asparagus
250gms cream cheese
¾ cup grated tasty cheddar cheese
½ packet onion soup mix
1 loaf sandwich style bread – white or wholemeal
40gms butter, melted

METHOD
  1. Pre-heat the oven to 190℃. and line a baking tray with cooking paper.
  2. Trim the asparagus spears of any hard ends and cut in half.
  3. Steam or simmer the asparagus in boiling water for 2-3 minutes until bright green and tender.
  4. Drain and refresh under cold water then drain on paper towels.
  5. Mash the cream cheese, ½ cup of the grated cheese and the soup mix to make a paste.
  6. Remove the crusts from the bread and spread each generously with the cream cheese mix.
  7. Place an asparagus spear on each and roll up to enclose the asparagus.
  8. Place the rolls on the lined baking tray and brush with the melted butter.
  9. Sprinkle with the remaining grated cheese.
  10. Bake for 8-10 minutes or until golden and toasted.
